Ingredients

Scale
  • 8 oz spiral pasta (penne, spaghetti, or tagliatelle work too)

  • 1 head of broccoli, cut into small florets

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 3 cloves garlic, crushed

  • 1 teaspoon oregano

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 2 tablespoons flour

  • 4 cups vegetable stock

  • 1.5 cups heavy cream

  • 1 cup Parmesan cheese, finely grated

  • Small bunch of fresh chopped parsley (or fresh basil)

Instructions

  • Prepare Broccoli: Cut broccoli into small florets and blanch by pouring boiling water over them. Rinse with cold water and set aside.
  • Prepare Sauce: Heat olive oil in a skillet over medium-high heat. Add garlic, oregano, garlic powder, and onion powder. Cook for 1 minute. Add flour and stir well.
  • Cook Sauce: Gradually add vegetable stock and heavy cream, whisking continuously. Simmer until thickened.
  • Combine Pasta & Broccoli: Add uncooked pasta and broccoli to the sauce. Stir to coat, cover, and cook on medium-low heat for 12–15 minutes, stirring occasionally.
  • Finish Dish: Add butter, Parmesan cheese, and parsley. Stir well until cheese melts. Serve hot with extra Parmesan if desired.

Notes

  • Freshly grated Parmesan provides the best flavor.
  • For a gluten-free option, use gluten-free pasta and flour.
  • Add red pepper flakes for a spicy kick.
