			For the Muffins:
- 2 cups all-purpose flour
 - 2 teaspoons baking powder
 - ½ teaspoon baking soda
 - 1 ½ teaspoons ground cinnamon
 - ¼ teaspoon salt
 - ¾ cup granulated sugar (or brown sugar for deeper flavor)
 - 1 cup chopped apples (Granny Smith or Honeycrisp)
 - 1 cup plant-based milk (soy, oat, or almond)
 - 1 teaspoon apple cider vinegar (or lemon juice)
 - 1 teaspoon vanilla extract
 - ¼ cup melted dairy-free butter (or coconut oil)
 - ¼ cup vegetable oil (or light olive oil)
 
For the Brown Sugar Crumb Topping:
- ⅓ cup all-purpose flour
 - ½ teaspoon ground cinnamon
 - ⅓ cup brown sugar
 - 3 tablespoons melted dairy-free butter
 
Instructions
- Make the Crumb Topping: Mix flour, brown sugar, and cinnamon. Stir in melted butter until crumbly. Set aside.
 - Mix Dry Ingredients: In a large bowl, whisk flour, baking powder, baking soda, cinnamon, and salt. Stir in chopped apples.
 - Combine Wet Ingredients: In another bowl, whisk milk, vinegar, vanilla, melted butter, oil, and sugar. Let sit for 5 minutes.
 - Mix the Batter: Gently fold the wet ingredients into the dry ingredients. Do not overmix.
 - Fill Muffin Cups: Spoon batter into a greased or lined 12-cup muffin tin, filling each ¾ full. Top with crumb mixture.
 - Bake: Bake at 425°F (220°C) for 5 minutes, then lower to 350°F (180°C) and bake for 20-25 minutes.
 - Cool & Serve: Let cool for 5 minutes before transferring to a wire rack.

- For a crunchier topping, press the crumb mixture lightly into the batter.
