For the Muffins:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon salt
  • ¾ cup granulated sugar (or brown sugar for deeper flavor)
  • 1 cup chopped apples (Granny Smith or Honeycrisp)
  • 1 cup plant-based milk (soy, oat, or almond)
  • 1 teaspoon apple cider vinegar (or lemon juice)
  • 1 teaspoon vanilla extract
  • ¼ cup melted dairy-free butter (or coconut oil)
  • ¼ cup vegetable oil (or light olive oil)

For the Brown Sugar Crumb Topping:

  • ⅓ cup all-purpose flour
  • ½ teaspoon ground cinnamon
  • ⅓ cup brown sugar
  • 3 tablespoons melted dairy-free butter

Instructions

  • Make the Crumb Topping: Mix flour, brown sugar, and cinnamon. Stir in melted butter until crumbly. Set aside.
  • Mix Dry Ingredients: In a large bowl, whisk flour, baking powder, baking soda, cinnamon, and salt. Stir in chopped apples.
  • Combine Wet Ingredients: In another bowl, whisk milk, vinegar, vanilla, melted butter, oil, and sugar. Let sit for 5 minutes.
  • Mix the Batter: Gently fold the wet ingredients into the dry ingredients. Do not overmix.
  • Fill Muffin Cups: Spoon batter into a greased or lined 12-cup muffin tin, filling each ¾ full. Top with crumb mixture.
  • Bake: Bake at 425°F (220°C) for 5 minutes, then lower to 350°F (180°C) and bake for 20-25 minutes.
  • Cool & Serve: Let cool for 5 minutes before transferring to a wire rack.

Notes

  • For a crunchier topping, press the crumb mixture lightly into the batter.
  • Don’t overmix the batter to keep the muffins soft.
  • Use Granny Smith apples for a nice tart contrast to the sweetness.
