This fresh and hearty salad features tender chicken, creamy avocado, crispy beef or turkey bacon, sweet corn, and juicy tomatoes tossed in a zesty lemon-lime vinaigrette. Perfect for a healthy lunch, light dinner, or meal prep!


Ingredients

  • 2 cooked chicken breasts, shredded or chopped

  • 2 ripe avocados, diced

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 6 slices turkey or beef bacon, cooked and chopped

  • 4 cups romaine lettuce, chopped

  • 2 Roma tomatoes, diced

  • 2 tbsp fresh parsley, minced

  • 2 tbsp fresh chives, chopped

  • Lemon Vinaigrette:

    • Juice of 1 lemon

    • Juice of 1 lime

    • ¼ cup olive oil

    • 2 garlic cloves, minced

    • 1 tbsp honey

    • Salt and pepper to taste


Instructions

  • Whisk vinaigrette ingredients until smooth and emulsified.

  • Prep and chop all salad ingredients.

  • Combine chicken, avocado, bacon, corn, lettuce, tomatoes, parsley, and chives in a large bowl.

  • Drizzle with vinaigrette and toss gently.

  • Serve immediately.

Notes

  • Add lime juice to avocado to slow browning.
  • Toast corn for added flavor.
