Description

This easy Baked Caprese Chicken Skillet combines juicy chicken breasts, melty mozzarella, and ripe tomatoes with fresh basil pesto—all baked in one pan and served over spaghetti for a fast, satisfying meal.


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 cup basil pesto

  • 6 oz fresh mozzarella, sliced

  • 3 large tomatoes, sliced

  • 1 pint cherry tomatoes

  • 2 tbsp olive oil

  • 12 oz spaghetti

  • 2 tbsp balsamic vinegar

  • Salt and pepper, to taste

  • Fresh basil, for garnish


Instructions

  • Preheat oven to 350°F and lightly grease an oven-safe skillet.

  • Season chicken with salt and pepper; place in skillet.

  • Spread pesto over each chicken breast and top with mozzarella and tomato slices.

  • Scatter cherry tomatoes around the skillet. Drizzle with olive oil and season.

  • Bake for 20–22 minutes until chicken is cooked through and cheese is melted.

  • Meanwhile, cook spaghetti, drain, and toss with remaining pesto.

  • Plate pasta, top with chicken and roasted tomatoes, drizzle with balsamic, and garnish with basil.

Notes

  • For extra flavor, use homemade pesto and add a sprinkle of Parmesan before serving.
  • Keep mozzarella slices thick to avoid over-melting.
