This easy Baked Caprese Chicken Skillet combines juicy chicken breasts, melty mozzarella, and ripe tomatoes with fresh basil pesto—all baked in one pan and served over spaghetti for a fast, satisfying meal.
Ingredients

4 boneless, skinless chicken breasts

1 cup basil pesto

6 oz fresh mozzarella, sliced

3 large tomatoes, sliced

1 pint cherry tomatoes

2 tbsp olive oil

12 oz spaghetti

2 tbsp balsamic vinegar

Salt and pepper, to taste

Fresh basil, for garnish
Instructions

Preheat oven to 350°F and lightly grease an oven-safe skillet.

Season chicken with salt and pepper; place in skillet.

Spread pesto over each chicken breast and top with mozzarella and tomato slices.

Scatter cherry tomatoes around the skillet. Drizzle with olive oil and season.

Bake for 20–22 minutes until chicken is cooked through and cheese is melted.

Meanwhile, cook spaghetti, drain, and toss with remaining pesto.

Plate pasta, top with chicken and roasted tomatoes, drizzle with balsamic, and garnish with basil.
Notes
