Description

This baked feta pasta is a creamy, tangy, and delicious one-pan dish made with roasted cherry tomatoes, feta cheese, olive oil, and pasta. It’s simple, packed with flavor, and perfect for a quick dinner!


Ingredients

  • 2 ½ cups cherry tomatoes
  • 1 (8 oz) block of feta cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • 5 tablespoons olive oil
  • 2 cloves garlic, minced
  • 12 oz pasta (penne, bowtie, or any short pasta)
  • ¼ cup fresh basil, chopped

Instructions

  • Preheat oven to 400°F (200°C).
  • Place cherry tomatoes in a baking dish, drizzle with 3 tbsp olive oil, and season with salt, pepper, and Italian seasoning.
  • Place the feta block in the center, drizzle with remaining olive oil, and bake for 35 minutes.
  • While baking, cook the pasta according to package instructions. Reserve ½ cup pasta water, then drain.
  • Remove the dish from the oven, mash the feta and tomatoes together, and mix in the garlic.
  • Toss in the cooked pasta and mix until fully coated. Add reserved pasta water if needed.
  • Stir in fresh basil, serve, and enjoy!

Notes

  • Use a block of feta for the best creamy texture.
  • Add spinach, olives, or grilled chicken for extra flavor.
  • If the sauce is too thick, add pasta water to adjust consistency.
