Description

This Baked Spinach Casserole is a comforting, cheesy delight made with ricotta, mozzarella, and Parmesan, blended with tender spinach and savory sautéed onions and garlic. It’s perfect as a cozy main dish or hearty side for family dinners, holidays, or meal prep.

  • 2 bags (10 oz each) spinach, steamed and drained

  • 1 cup ricotta cheese

  • 1 cup mozzarella cheese, shredded

  • 1/2 cup Parmesan cheese, grated

  • 1/4 cup breadcrumbs (for topping)

  • 1/2 cup onion, finely chopped

  • 2 cloves garlic, minced

  • 2 large eggs

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon nutmeg (optional)

  • 1 tablespoon olive oil (for sautéing)

  • 2 tablespoons melted butter (for topping)


Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  • Steam spinach, drain thoroughly, and squeeze out excess water.
  • Heat olive oil in a skillet over medium heat, sauté onions and garlic until translucent (about 3-4 minutes).
  • In a large bowl, combine spinach, ricotta, mozzarella, Parmesan, onions, garlic, eggs, salt, pepper, and nutmeg. Mix well.
  • Spread mixture evenly in the baking dish.
  • Mix breadcrumbs and melted butter, then sprinkle over the casserole.
  • Bake for 25-30 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.
  • Let cool for 5 minutes before serving.

Notes

  • Make sure to drain spinach thoroughly to avoid a watery casserole.
  • You can substitute gluten-free breadcrumbs or almond flour if desired.
  • Add cooked chicken or turkey for a heartier meal.
