  • 1 cup mashed bananas (about 3 ripe bananas)

For the Cream Cheese Frosting:

  • ½ cup butter, softened
  • 8 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 2 tablespoons heavy whipping cream

Optional Garnishes:

  • Chopped walnuts
  • Fresh banana slices
  • Caramel drizzle

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • In a bowl, cream butter and sugar until light and fluffy.
  • Add eggs, sour cream, and vanilla, mixing well.
  • In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into the wet ingredients.
  • Fold in the mashed bananas until just combined.
  • Pour batter into the prepared pan and bake for 25-35 minutes, until a toothpick comes out clean. Let cool completely.
  • For frosting, beat butter and cream cheese until smooth. Add vanilla extract, powdered sugar, and heavy cream, mixing until fluffy.
  • Spread frosting over the cooled cake. Garnish with walnuts, banana slices, or caramel drizzle. Slice and enjoy!
