Ingredients
Scale
For the Dough:
- ¾ cup milk (warmed to 110°F)
- 2 ¼ teaspoons active dry yeast (1 packet)
- 1 cup mashed bananas (about 2 medium bananas)
- 3 ½ cups all-purpose flour
- 4 tablespoons unsalted butter (cubed and at room temperature)
- ¼ cup granulated sugar
- 1 teaspoon salt
- 1 large egg (room temperature)
For the Cinnamon Filling:
- 6 tablespoons unsalted butter (room temperature)
- ¾ cup brown sugar
- 2 teaspoons ground cinnamon
- 2 medium bananas (sliced thinly)
For the Cream Cheese Icing:
- 4 ounces cream cheese (room temperature)
- 2 tablespoons unsalted butter (room temperature)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Activate the yeast by sprinkling it over the warmed milk and letting it sit for 10 minutes.
- In a large mixing bowl, combine the flour, sugar, and salt. Add the cubed butter and mix until crumbly.
- Add the yeast mixture, mashed bananas, and egg to the dry ingredients. Knead the dough until smooth and soft. Place in a greased bowl, cover, and let it rise for 1 hour.
- Make the filling by beating butter until smooth and mixing in brown sugar and cinnamon.
- Roll out the dough into a ¼-inch thick rectangle. Spread the filling evenly, then layer with banana slices. Roll the dough tightly and cut into 12 even pieces.
- Arrange the rolls in a greased 9×13-inch pan. Cover and let rise for 20 minutes while preheating the oven to 375°F.
- Bake the rolls for 28-33 minutes or until golden brown.
- For the icing, beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla. Spread over warm rolls.
Notes
- Use ripe bananas for better flavor and natural sweetness.
- Ensure milk is not too hot to avoid killing the yeast.
- Letting the dough rise properly ensures fluffy rolls.
