- 1 teaspoon freshly ground black pepper
- 2 tablespoons avocado oil (or olive oil)

- 6 tablespoons unsalted butter, softened
- 6 garlic cloves, minced
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
Instructions
- Let the beef tenderloin sit at room temperature for 1-2 hours before cooking. Pat dry and season with salt and pepper.
- In a small bowl, mix the softened butter with minced garlic, rosemary, and thyme.
- Heat avocado oil in a cast-iron skillet over medium-high heat. Sear the beef on all sides for about 10 minutes until browned.
- Preheat oven to 425°F (220°C). Spread the garlic herb butter over the top of the roast.
- Transfer the skillet to the oven and roast for 15-20 minutes, depending on the desired doneness.
- Remove from the oven and let the tenderloin rest for 10-15 minutes before slicing. Serve with your favorite sides.
