  • For the Beef Tenderloin Roast:

    • 4 to 4 ½-pound beef tenderloin, trimmed and tied
    • 2 teaspoons kosher salt
    • 1 teaspoon freshly ground black pepper
    • 2 tablespoons avocado oil (or olive oil)
  • For the Garlic Herb Butter:

    • 6 tablespoons unsalted butter, softened
    • 6 garlic cloves, minced
    • 1 teaspoon fresh rosemary, chopped
    • 1 teaspoon fresh thyme, chopped

Instructions

  • Let the beef tenderloin sit at room temperature for 1-2 hours before cooking. Pat dry and season with salt and pepper.
  • In a small bowl, mix the softened butter with minced garlic, rosemary, and thyme.
  • Heat avocado oil in a cast-iron skillet over medium-high heat. Sear the beef on all sides for about 10 minutes until browned.
  • Preheat oven to 425°F (220°C). Spread the garlic herb butter over the top of the roast.
  • Transfer the skillet to the oven and roast for 15-20 minutes, depending on the desired doneness.
  • Remove from the oven and let the tenderloin rest for 10-15 minutes before slicing. Serve with your favorite sides.

Notes

  • Use a meat thermometer to check for doneness: 120°F for medium-rare, 130°F for medium.
  • Tying the roast ensures even cooking and a uniform shape.
