- ¼ cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ tablespoon butter
- ½ cup diced green bell pepper
- 4 slices cooked turkey bacon, crumbled
- ½ cup shredded cheddar cheese
- 2 large flour tortillas
- 1 teaspoon olive oil or butter
Instructions
- In a bowl, whisk eggs, milk, salt, and pepper.
- Heat a skillet, melt butter, and scramble eggs until just set.
- In another pan, cook turkey bacon until crispy, then dice.
- Sauté bell peppers until slightly softened.
- Place a tortilla on a flat surface. Sprinkle cheese, eggs, bacon, and bell peppers, then top with more cheese and a second tortilla.
- Heat oil in a skillet over medium heat. Cook quesadilla for 2–3 minutes per side until golden brown.
- Let rest for a minute before slicing. Serve hot with salsa or sour cream.
