Description

This crispy breakfast quesadilla is loaded with fluffy scrambled eggs, melted cheddar cheese, and crispy turkey bacon. It’s quick, easy, and perfect for meal prep!


Ingredients

  • 4 large eggs
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ tablespoon butter
  • ½ cup diced green bell pepper
  • 4 slices cooked turkey bacon, crumbled
  • ½ cup shredded cheddar cheese
  • 2 large flour tortillas
  • 1 teaspoon olive oil or butter

Instructions

  • In a bowl, whisk eggs, milk, salt, and pepper.
  • Heat a skillet, melt butter, and scramble eggs until just set.
  • In another pan, cook turkey bacon until crispy, then dice.
  • Sauté bell peppers until slightly softened.
  • Place a tortilla on a flat surface. Sprinkle cheese, eggs, bacon, and bell peppers, then top with more cheese and a second tortilla.
  • Heat oil in a skillet over medium heat. Cook quesadilla for 2–3 minutes per side until golden brown.
  • Let rest for a minute before slicing. Serve hot with salsa or sour cream.

Notes

  • Use whole wheat tortillas for extra fiber.
  • Swap turkey bacon for mushrooms or spinach for a vegetarian version.
  • Add jalapeños or hot sauce for a spicy kick.
