For the Bread Pudding:

  • 2 large eggs

  • 2 large egg yolks

  • 2¼ cups half-and-half cream

  • 2 cups whole milk

  • ½ cup melted butter

  • ¼ cup sugar

  • 1 tbsp vanilla extract

  • 1½ tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ¼ tsp sea salt

  • 20 dinner rolls (about 1¼ lbs), cut into 1-inch cubes (about 18 cups)

  • 3 tbsp brown sugar (for topping)

For the Vanilla Sauce:

  • 1 cup butter, cubed

  • 1 cup packed brown sugar

  • 1 cup half-and-half cream

  • 2 tsp vanilla extract

  • ¼ tsp sea salt

  • ⅛ tsp baking soda


Instructions

  • Preheat oven to 350°F (175°C) and grease a 3-quart or 13×9-inch baking dish.

  • In a large bowl, whisk eggs, yolks, half-and-half, milk, melted butter, sugar, vanilla, cinnamon, nutmeg, and salt.

  • Add bread cubes and toss to coat. Let sit for 15 minutes.

  • Pour mixture into prepared dish, sprinkle with brown sugar, and bake for 40–45 minutes, until golden brown and set.

  • For the vanilla sauce, melt butter in a saucepan over medium heat. Add brown sugar, stirring until dissolved.

  • Add half-and-half cream, bring to a gentle boil, then simmer for 15–20 minutes.

  • Remove from heat and stir in vanilla, salt, and baking soda.

  • Serve warm bread pudding with vanilla sauce drizzled over the top.

Notes

  • For extra flavor, try adding chocolate chips, dried fruits, or chopped nuts before baking.
