Description
This brookies recipe combines the fudgy texture of brownies with the chewy crispiness of cookies. It’s rich, chocolatey, and irresistibly delicious!
Ingredients
- cup dark/milk chocolate chips (optional).
- Wet Ingredients: 1¼ cups dark chocolate (chopped), ¼ cup butter, 2 eggs, ¾ cup caster sugar, ½ cup demerara sugar, 1 tsp vanilla extract.
Instructions
- Preheat oven to 320°F (160°C) and line a baking sheet with parchment paper.
- Melt chocolate and butter over a double boiler or in the microwave. Stir in vanilla extract.
- Whisk eggs, caster sugar, and demerara sugar until pale and fluffy.
- Sift flour, cocoa powder, baking powder, and salt. Add chocolate chips if using.
- Gently fold the melted chocolate into the egg mixture. Then fold in dry ingredients.
- Scoop batter onto the baking sheet and bake for 12-14 minutes until edges are set.
- Cool on the tray for 10 minutes before transferring to a rack.
Notes
- For extra crunch, sprinkle sea salt on top before baking.
- Let them cool completely for the best chewy texture.
- Store in an airtight container for up to 5 days or freeze for up to 3 months.
