Description

These Mini Cheesecake Bites are rich, creamy, and topped with a hint of cinnamon for a unique flavor twist. Made without the hassle of a water bath, they’re incredibly easy to prepare and perfect for any occasion.

Graham Cracker Crust:

  • 1 1/4 cups cinnamon graham crackers (or plain graham crackers with cinnamon added)

  • 3 tablespoons butter, melted

  • 1/4 cup granulated sugar

Cheesecake Filling:

  • 16 oz cream cheese (2 packages, softened)

  • 1/2 cup granulated sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground cinnamon (secret ingredient)

  • Fresh berries (optional for garnish)


Instructions

  • Preheat Oven: Preheat oven to 350°F (177°C). Line a cupcake baking pan with paper liners.
  • Prepare the Crust: Combine graham crackers, sugar, and melted butter. Mix until well combined and press into liners.
  • Make the Filling: Beat cream cheese and sugar until smooth. Add eggs, vanilla, and cinnamon; mix until creamy.
  • Assemble and Bake: Pour filling over crusts. Bake for 16–20 minutes until centers are set.
  • Cool & Serve: Cool completely, then chill for at least 1 hour before serving. Top with berries or desired toppings.
