Description

This quick and flavorful salsa is made with canned tomatoes, Rotel, fresh jalapeños, and herbs. Just blend, chill, and enjoy in 30 minutes or less. It’s perfect for parties, taco nights, or weekly snacking and can be customized to your heat preference.


Ingredients

  • 1 (28 oz) can diced tomatoes

  • 3 (10 oz) cans Rotel (choose mild, original, or hot)

  • ½ red onion, chopped

  • ¼ cup fresh cilantro

  • 2 cloves garlic

  • 2 jalapeños (seeded for mild)

  • 1 tsp cumin

  • 1 tsp salt

  • 1 tsp black pepper

  • ½ tsp granulated sugar (optional)

  • Optional: 1 additional jalapeño with seeds for heat


Instructions

  • Blend diced tomatoes with juice until smooth.

  • Pour half into a bowl to reserve.

  • Add onion, garlic, jalapeños, cilantro, spices, and sugar to the blender.

  • Pulse until desired texture is reached.

  • Combine with reserved tomato mixture. Stir and adjust seasoning.

  • Chill for 30 minutes before serving.

  • Add lime juice for a tangy twist.
  • Use a mix of mild and hot Rotel for balanced heat.
  • For smoky flavor, roast garlic and peppers first.
