Description

This recipe transforms a classic grilled cheese into a gourmet delight with creamy brie, tangy blackberry balsamic jam, and buttery golden sourdough bread. Perfect for a quick yet indulgent lunch or a unique appetizer option.


Ingredients

  • 1 cup fresh blackberries (or frozen)
  • 2 tablespoons sugar
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh lemon juice
  • Pinch kosher salt
  • 4 slices sourdough bread
  • 4 ounces brie cheese, sliced
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons butter

Instructions

  • In a saucepan, combine blackberries, sugar, balsamic vinegar, lemon juice, and salt. Simmer for 7-10 minutes, mashing berries until thickened. Cool.
  • Butter one side of each slice of bread. Layer brie on the unbuttered side of two slices, sprinkle with thyme, and spread blackberry jam on the other slices.
  • Place jam-side down on top of the brie slices to form sandwiches.
  • Grill over medium heat for 3-4 minutes per side, until golden brown and the cheese is melted.

Notes

  • The blackberry balsamic jam can be made ahead and stored in the fridge for up to a week.
  • Swap sourdough for gluten-free bread if needed.
