This recipe transforms a classic grilled cheese into a gourmet delight with creamy brie, tangy blackberry balsamic jam, and buttery golden sourdough bread. Perfect for a quick yet indulgent lunch or a unique appetizer option.

			- 1 cup fresh blackberries (or frozen)
 - 2 tablespoons sugar
 - 1 tablespoon balsamic vinegar
 - 1 teaspoon fresh lemon juice
 - Pinch kosher salt
 - 4 slices sourdough bread
 - 4 ounces brie cheese, sliced
 - 1 teaspoon fresh thyme leaves
 - 2 tablespoons butter
 
Instructions
- In a saucepan, combine blackberries, sugar, balsamic vinegar, lemon juice, and salt. Simmer for 7-10 minutes, mashing berries until thickened. Cool.
 - Butter one side of each slice of bread. Layer brie on the unbuttered side of two slices, sprinkle with thyme, and spread blackberry jam on the other slices.
 - Place jam-side down on top of the brie slices to form sandwiches.
 - Grill over medium heat for 3-4 minutes per side, until golden brown and the cheese is melted.
 
Notes
- The blackberry balsamic jam can be made ahead and stored in the fridge for up to a week.
 - Swap sourdough for gluten-free bread if needed.
