A decadent, no-bake layered dessert featuring a biscuit crust, creamy pistachio and cream cheese layers, and a luscious blackberry topping.
Ingredients

Base: 1 cup crushed digestive biscuits, ¼ cup melted butter

Pistachio Layer: 1 cup ground pistachios, ¼ cup confectioners’ sugar, ¼ cup heavy cream

Cream Cheese Layer: 1 cup cream cheese, ½ cup confectioners’ sugar, 1 tsp vanilla extract

Blackberry Layer: 2 cups blackberries, ½ cup granulated sugar, 1 tbsp lemon juice, 2 tsp cornstarch

Topping: ¼ cup chopped pistachios, fresh blackberries
Instructions

Mix crushed biscuits and melted butter, press into pan, chill.

Blend pistachios, sugar, and cream to a paste, spread over base, chill.

Beat cream cheese, sugar, and vanilla, spread over pistachio layer, chill.

Cook blackberries with sugar and lemon juice, thicken with cornstarch, cool, spread over cream cheese layer.

Top with chopped pistachios and fresh blackberries. Chill fully, slice and serve.
Notes
- Chill each layer fully before adding the next.
- Use thawed frozen blackberries if fresh aren’t available.
- For a vegan version, substitute with dairy-free alternatives.
