- 2 cups fresh or frozen blueberries
- ¼ cup granulated sugar
- ¼ cup brown sugar
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tbsp cornstarch
- 8 oz cream cheese, softened
- ⅓ cup granulated sugar
- 1 egg yolk
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 1 box frozen puff pastry (2 sheets), thawed
- 1 egg + 1 tbsp water (for egg wash)
- Powdered sugar (for dusting)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Cook blueberries, sugars, lemon juice, zest, and cornstarch in a saucepan over medium heat until thickened. Let cool.
- Beat cream cheese, sugar, egg yolk, vanilla, and lemon juice until smooth.
- Roll out puff pastry, cut into squares, and fill each with cream cheese and blueberry filling.
- Seal edges, brush with egg wash, and bake for 18-20 minutes or until golden.
- Let cool, then dust with powdered sugar before serving.
Notes
- Use frozen blueberries if fresh ones aren’t available.
- Don’t overfill the pastries to prevent leaking.
- Serve warm for the best taste and texture.
