Description

A light and refreshing summer salad featuring juicy blueberries, ripe peaches, crisp cucumbers, and crumbled feta, tossed with a tangy lemon basil vinaigrette. Perfect for warm-weather meals or outdoor gatherings.


Ingredients

  • 1 pint fresh blueberries

  • 2 ripe peaches, diced

  • 2 Persian cucumbers, thinly sliced

  • ½ cup crumbled feta cheese

  • 3 tbsp fresh lemon juice

  • 1 tbsp Dijon mustard

  • 1 tbsp honey

  • 1 tbsp olive oil

  • 1 tbsp chopped fresh basil

  • Salt and pepper to taste


Instructions

  • In a large bowl, gently combine blueberries, peaches, cucumbers, and basil.

  • In a separate bowl, whisk together lemon juice, mustard, honey, salt, and pepper.

  • Slowly whisk in olive oil until emulsified.

  • Pour vinaigrette over the salad and toss gently.

  • Sprinkle with feta and toss lightly again.

  • Serve immediately for best flavor and texture.
