This fresh and colorful salad combines juicy blueberries, ripe peaches, crisp cucumbers, and creamy feta cheese tossed in a zesty lemon basil vinaigrette. It’s light, refreshing, and bursting with summer flavor—perfect for a quick lunch, a summer side dish, or a crowd-pleasing appetizer.


Ingredients

  • 1 pint fresh blueberries

  • 2 ripe peaches, diced

  • 2 Persian cucumbers, sliced

  • ½ cup crumbled feta cheese

  • 3 tbsp fresh lemon juice

  • 1 tbsp Dijon mustard

  • 1 tbsp honey

  • 1 tbsp olive oil

  • 1 tbsp finely chopped fresh basil

  • Kosher salt and freshly ground black pepper, to taste


Instructions

  • Wash and prepare all fresh produce.

  • Combine peaches, blueberries, and cucumbers in a large bowl.

  • In a small bowl, whisk together lemon juice, Dijon mustard, honey, salt, and pepper.

  • Slowly whisk in olive oil until the vinaigrette is smooth.

  • Stir in chopped basil.

  • Pour the dressing over the salad and gently toss.

  • Add crumbled feta and toss lightly again.

  • Serve immediately.

  • Use ripe, sweet peaches for the best flavor.
