Ingredients

  • 2 cups cooked rice (cold, day-old)
  • 4 slices turkey or beef bacon, chopped
  • 2 eggs, lightly beaten
  • ½ cup mixed vegetables (peas, carrots, corn)
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter or oil

Instructions

  • Cook the Bacon – Heat a skillet over medium heat, cook the chopped bacon until crispy, then remove and set aside.
  • Scramble the Eggs – In the same pan, melt butter, scramble the eggs, then remove and set aside.
  • Sauté Aromatics – Cook the diced onion until soft, add garlic, and sauté until fragrant.
  • Fry the Rice – Add cold rice, fry undisturbed for 4-5 minutes, then mix in soy sauce, sesame oil, and seasonings.
  • Add Vegetables – Stir in mixed vegetables and cook for 2-3 minutes.
  • Combine Everything – Return the bacon, eggs, and green onions to the pan, mix well, and cook for another 2 minutes.
  • Serve Hot – Enjoy immediately with extra soy sauce or sesame seeds.

Notes

  • For best results, use cold, day-old rice for a crispy texture.
  • You can swap turkey bacon for chicken sausage or tofu for variety.
  • Add a spicy kick with Sriracha or red pepper flakes.
