Description

These flaky, golden puff pastry bars are stuffed with scrambled eggs, crispy hash browns, sausage gravy, melted cheese, and bacon. Perfect for meal prep, brunch, or a grab-and-go breakfast, these bars are easy to make and incredibly satisfying.

  • 2 sheets puff pastry, thawed
  • 8 oz ground breakfast sausage
  • ¼ cup all-purpose flour
  • ¼ cup milk
  • 1 tsp black pepper
  • 1½ cups frozen shredded hash browns
  • 4 large eggs
  • 2 tbsp heavy cream
  • ½ cup shredded cheddar cheese
  • 4 slices Havarti or cheddar cheese
  • 46 oz cooked bacon, crumbled
  • 1 egg (for egg wash)

Instructions

  • Prepare the sausage gravy: Cook the sausage, add flour, and stir in milk to make a thick gravy.
  • Cook hash browns: Fry until golden and crispy.
  • Cook bacon: Cook until crispy, then crumble.
  • Scramble eggs: Whisk eggs with heavy cream and cook until just set.
  • Assemble: Roll out puff pastry, layer with sausage gravy, hash browns, eggs, cheese, and bacon.
  • Seal & bake: Cover with the second pastry sheet, crimp edges, brush with egg wash, and bake at 375°F (190°C) for 20-25 minutes until golden brown.
  • Cool & serve: Let cool for 5-10 minutes before slicing.

Notes

  • For extra crispiness, reheat in an air fryer or oven.
  • Swap bacon and sausage for vegetarian alternatives like mushrooms or spinach.
  • Serve with hot sauce or a drizzle of maple syrup for added flavor.
