Ingredients

  • 4 ripe Roma tomatoes, diced
  • ¼ cup fresh basil, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic vinegar (optional)
  • 1 small clove garlic, minced
  • Salt and black pepper to taste
  • 1 baguette or Italian bread, sliced
  • 2 tablespoons olive oil, for brushing
  • 1 clove garlic, peeled and halved (for rubbing on bread)

Instructions

  • Dice the tomatoes and place them in a bowl. Add chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper. Mix well and let it sit.
  • Preheat oven to 450°F (232°C) or heat a grill pan. Slice the bread into ½-inch pieces and brush with olive oil. Toast for 5-7 minutes until golden.
  • Rub the warm toasted bread with a halved garlic clove for extra flavor.
  • Spoon the tomato mixture onto each slice and serve immediately.
