Description

Carolina Caviar is a fresh, flavorful bean and vegetable dip tossed in a tangy Italian dressing. This easy, versatile recipe is perfect as a party appetizer, a healthy snack, or a colorful side dish.

  • Main Ingredients:
    • 1 cup dried conch peas (or black-eyed peas)
    • 1 (15.5 oz) can black beans, drained and rinsed
    • 1 (15.25 oz) can sweet corn, drained
    • 1 red bell pepper, diced
    • ½ medium red onion, finely chopped
    • 2 cloves garlic, minced
    • 1 jalapeño, minced
    • ¼ cup fresh cilantro, chopped
  • Dressing:
    • ⅔ cup Italian salad dressing
    • 2 tbsp apple cider vinegar
    • 1 tbsp olive oil
    • 1 tsp granulated sugar

Instructions

  • Cook conch peas: Soak overnight, then boil in salted water for 1 hour until tender. Drain and cool.
  • Prepare veggies: Dice bell pepper, chop onion, mince garlic and jalapeño.
  • Make the dressing: Whisk Italian dressing, vinegar, olive oil, and sugar.
  • Combine ingredients: Mix beans, veggies, and dressing in a bowl. Toss to coat.
  • Chill: Refrigerate for at least 1 hour before serving.

Notes

  • For extra flavor, let the mixture marinate overnight.
  • Substitute fresh corn for canned when in season.
  • Adjust jalapeño for desired spice level.
