Ingredients

1 lb chicken breasts, cubed

1 small onion, chopped

2 garlic cloves, minced

1½ cups long grain white rice, rinsed

2 cups chicken stock

2 cups water

3 cups broccoli florets, chopped

½ cup milk

2 cups shredded sharp cheddar cheese (divided)

Olive oil

Salt and pepper
Instructions

Season and brown chicken in olive oil, then set aside.

Sauté onion and garlic until soft.

Add chicken back in, stir in rice, stock, and water. Bring to a boil.

Simmer covered for 10 minutes, then stir in broccoli and cook until rice is tender.

Stir in milk and 1 cup cheese. Top with remaining cheese.

Bake at 425°F for 10–15 minutes until cheese is melted and bubbly.
Notes
- Use an oven-safe pan for easy transfer.
- Substitute frozen broccoli (thawed) if needed.
- Let rest for 5–10 minutes before serving for best texture.
