Description

This creamy, cheesy chicken pasta is the ultimate one-pot comfort food. It features juicy chicken, tender pasta, and a rich tomato cream sauce topped with melty mozzarella. Quick to make, family-friendly, and perfect for weeknights!


Ingredients

  • 2 boneless skinless chicken breasts, cubed

  • 250g pasta shells (or other short pasta)

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 2 tbsp tomato paste

  • 1 tsp sriracha (optional)

  • 1 cup milk

  • ½ cup heavy cream

  • 1 cup shredded mozzarella cheese

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • ½ tsp red chili powder

  • ½ tsp black pepper

  • 1 tsp dried oregano

  • Salt to taste

  • ½ cup reserved pasta water

  • Fresh parsley or basil for garnish


Instructions

  • Cook pasta until al dente. Reserve ½ cup pasta water, then drain.

  • Heat oil in a skillet. Sauté garlic until golden.

  • Add chicken and all spices. Cook until browned and cooked through.

  • Stir in tomato paste and sriracha; cook 2–3 mins.

  • Pour in milk and cream. Simmer gently.

  • Add ¾ cup mozzarella and stir until melted.

  • Mix in pasta. Adjust with pasta water if needed.

  • Top with remaining mozzarella. Cover until melted.

  • Garnish with herbs. Serve hot.

Notes

  • Use rotisserie chicken to save time.
  • Add spinach or bell peppers for extra nutrients.
  • Adjust spice level with chili flakes or more sriracha.
