Description

This Cheesy Tater Tot Breakfast Casserole is a hearty, satisfying dish made with crispy tater tots, savory sausage, smoky turkey bacon, gooey cheddar cheese, and a creamy egg mixture. Perfect for breakfast, brunch, or meal prepping.


Ingredients

  • 4 slices turkey bacon, cooked and crumbled
  • 1 lb ground breakfast sausage (chicken or beef sausage)
  • 2 ½ cups sharp cheddar cheese, shredded (divided)
  • 2 cups whole milk
  • 5 large eggs
  • ½ tsp freshly ground black pepper
  • ½ tsp onion powder
  • Pinch of salt
  • 2 lbs frozen, unseasoned tater tots
  • 3 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  • Cook turkey bacon until crispy; crumble and set aside.
  • Cook sausage until browned; drain and layer on the bottom of the dish.
  • Sprinkle 2 cups of cheese over the sausage, followed by the crumbled bacon.
  • Whisk eggs, milk, black pepper, onion powder, and salt. Pour over the cheese and sausage mixture.
  • Arrange frozen tater tots evenly over the top.
  • Bake for 35 minutes. Sprinkle with remaining cheese and bake for another 5-10 minutes.
  • Garnish with fresh parsley and let rest for 10 minutes before serving.
