Description

This Chicken Avocado Melt Sandwich is everything you want in a quick comfort meal—juicy seasoned chicken, creamy avocado, melted cheese, and crisp golden bread, ready in 30 minutes. It’s satisfying, easy to customize, and absolutely delicious.


Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 ripe avocado, sliced

  • 4 slices of cheese (Swiss, cheddar, or provolone)

  • 4 slices of bread (sourdough or ciabatta)

  • 2 tbsp mayonnaise

  • 1 tbsp Dijon mustard

  • 1 small red onion, thinly sliced

  • 1 tomato, sliced

  • Olive oil or butter, for grilling


Instructions

  • Season and cook chicken breasts in olive oil until golden and fully cooked. Rest and slice thinly.

  • Slice avocado, tomato, and red onion. Mix mayonnaise and mustard, then spread on each bread slice.

  • Assemble sandwich: chicken, avocado, cheese, onion, tomato. Top with second bread slice.

  • Grill sandwiches in skillet with butter or oil, 3–4 minutes per side, until golden brown and cheese melts.

  • Let rest for a minute, slice in half, and serve warm.

Notes

  • Use fresh avocado and lemon juice to avoid browning.
  • A panini press creates a perfectly crisp finish.
  • You can substitute rotisserie chicken to save time.
