- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced

Instructions
- Season and cook the chicken in a skillet over medium-high heat for 6-7 minutes per side. Let it rest, then slice.
- Slice the avocado, cheese, onion, and tomato. Mix mayonnaise and Dijon mustard in a small bowl.
- Spread the mayo-mustard mixture on one side of each bread slice.
- Layer cheese, sliced chicken, avocado, red onion, and tomato on two slices of bread. Top with another slice of cheese and the second piece of bread.
- Heat a skillet or grill pan over medium heat with butter or olive oil.
