  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 ripe avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling

Instructions

  • Season and cook the chicken in a skillet over medium-high heat for 6-7 minutes per side. Let it rest, then slice.
  • Slice the avocado, cheese, onion, and tomato. Mix mayonnaise and Dijon mustard in a small bowl.
  • Spread the mayo-mustard mixture on one side of each bread slice.
  • Layer cheese, sliced chicken, avocado, red onion, and tomato on two slices of bread. Top with another slice of cheese and the second piece of bread.
  • Heat a skillet or grill pan over medium heat with butter or olive oil.
  • Grill the sandwich for 3-4 minutes per side until golden brown and the cheese is melted.
  • Slice in half and serve warm.
