Description

A light and refreshing summer salad with grilled chicken, juicy blueberries, creamy feta, and a homemade balsamic vinaigrette. Perfect for lunch or dinner.


Ingredients

  • 2 boneless, skinless chicken breasts

  • 6 cups spring mix greens

  • 1 cup fresh blueberries

  • ½ cup crumbled feta cheese

  • ½ cup cucumber, sliced

  • ¼ cup red onion, sliced

  • ¼ cup dried cranberries

  • ⅓ cup olive oil

  • 3 tbsp balsamic vinegar

  • 1 clove garlic, minced

  • 1 tsp honey

  • ¼ tsp salt

  • ¼ tsp black pepper


Instructions

  • Grill chicken until cooked through, about 5–6 minutes per side.

  • Let chicken rest, then slice.

  • Whisk vinaigrette ingredients together.

  • In a large bowl, layer greens, cucumber, blueberries, onion, cranberries, and feta.

  • Top with sliced chicken and drizzle with dressing just before serving.

Notes

  • For meal prep, keep the dressing separate.
  • Use rotisserie chicken for a quick option.
