Description

This Easy Chicken Burrito Casserole combines all the classic burrito flavors in one simple, satisfying, and cheesy dish. Packed with shredded chicken, rice, black beans, corn, and melty cheese, it’s perfect for busy weeknights or make-ahead meals.

  • Main Ingredients:
  • 1 cup parboiled long-grain brown rice or white rice, uncooked
  • 2 cups cooked, shredded chicken (rotisserie, boiled, or baked)
  • 1 can (15 oz) black beans, low-sodium, drained and rinsed
  • 1 cup corn kernels (frozen or fresh)
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cups chicken broth (reduced-sodium preferred)
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 can (4 oz) mild green chilies, drained
  • 1 ½ cups shredded Monterey Jack or cheddar cheese (or a mix)
  • Seasonings:
  • 2 tablespoons fajita seasoning
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • Optional Toppings:
  • Sour cream, guacamole, salsa, avocado, lime juice, chopped cilantro, crushed tortilla chips.

Instructions

  • Preheat oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  • Add rice, onion, bell pepper, fajita seasoning, cayenne pepper, salt, and pepper to the dish. Mix well.
  • In a bowl, whisk together chicken broth, tomato paste, olive oil, and green chilies until well-combined.
  • Pour the broth mixture over the rice mixture and stir well.
  • Add shredded chicken, black beans, and corn. Mix thoroughly.
  • Cover with foil and bake for 65-70 minutes, or until rice is cooked and liquid is absorbed.
  • Remove foil, sprinkle cheese evenly over the casserole, and bake uncovered for 5-10 minutes, until cheese is melted and golden.
  • Let rest for 5-10 minutes before serving. Garnish with desired toppings.

Notes

  • For extra heat, add diced jalapeños or extra cayenne pepper.
  • Use freshly shredded cheese for the best texture.
  • To make it vegetarian, replace chicken with more beans or roasted vegetables.
