Ingredients
For the Marinade:

¼ cup olive oil

¼ cup low sodium soy sauce

3 tbsp lemon juice

2 tbsp brown sugar or honey

1 tbsp Worcestershire sauce

2 cloves garlic, minced

1 tsp Italian seasoning or oregano

¼ tsp black pepper
-
1¼ lbs boneless, skinless chicken breasts, cut into 1-inch cubes
For the Vegetables:

2 small zucchini, sliced

1 red bell pepper, chopped
-
1 yellow bell pepper, chopped

1 small onion, chopped

1½ tbsp olive oil

Salt and pepper to taste
Instructions

Combine marinade ingredients in a bowl or bag, add chicken, and marinate for 30 minutes to 4 hours.

Soak wooden skewers in water for 20–30 minutes.

Toss chopped vegetables in olive oil, salt, and pepper.

Thread chicken and vegetables onto skewers.

Grill on medium heat for 12–18 minutes or bake at 425°F for 24–30 minutes, turning occasionally.

Rest kabobs for 5 minutes before serving.
