Cookies:

  • 1/2 cup unsalted butter, softened
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 2 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon baking powder

Frosting:

  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tablespoons heavy cream (more if needed)
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • Pink gel food coloring

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Beat butter, oil, granulated sugar, and powdered sugar until creamy.
  • Add egg, vanilla, and almond extract. Mix well.
  • In another bowl, combine flour, salt, cream of tartar, and baking powder.
  • Gradually mix dry ingredients into the wet mixture until just combined.
  • Scoop 1/4 cup dough per cookie, roll into balls, and flatten slightly.
  • Place cookies on baking sheets and bake for 9-10 minutes. Let cool completely.
  • For frosting, beat butter until creamy. Add powdered sugar, heavy cream, almond extract, and vanilla extract. Mix until smooth.
  • Add pink food coloring and blend well.
  • Spread frosting over cooled cookies and chill for 30 minutes before serving.

Notes

  • For thicker cookies, chill dough for an hour before baking.
  • Store cookies in an airtight container in the refrigerator for up to 5 days.
