Cookies:
- 1/2 cup unsalted butter, softened
- 1/4 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup powdered sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 2 3/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon baking powder
Frosting:
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar, sifted
- 2 tablespoons heavy cream (more if needed)
- 1/2 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- Pink gel food coloring
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Beat butter, oil, granulated sugar, and powdered sugar until creamy.
- Add egg, vanilla, and almond extract. Mix well.
- In another bowl, combine flour, salt, cream of tartar, and baking powder.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Scoop 1/4 cup dough per cookie, roll into balls, and flatten slightly.
- Place cookies on baking sheets and bake for 9-10 minutes. Let cool completely.
- For frosting, beat butter until creamy. Add powdered sugar, heavy cream, almond extract, and vanilla extract. Mix until smooth.
- Add pink food coloring and blend well.
- Spread frosting over cooled cookies and chill for 30 minutes before serving.
Notes
- For thicker cookies, chill dough for an hour before baking.
