Description

A vibrant and refreshing salad made with shredded cabbage, juicy chicken, sweet mandarin oranges, and crunchy toppings, all tossed in a flavorful sesame dressing.


Ingredients

  • 3 cups napa cabbage, thinly sliced

  • 2 cups iceberg lettuce, chopped

  • 2 cups cooked chicken, shredded

  • 1 cup shredded carrots

  • 1 cup canned mandarin oranges, drained

  • 2 green onions, thinly sliced

  • 2 tbsp toasted sesame seeds

  • 1/4 cup sliced almonds

  • 1/2 cup crispy chow mein noodles or wonton strips

Dressing:

  • 3 tbsp sesame oil

  • 2 tbsp rice vinegar

  • 1 tbsp low-sodium soy sauce

  • 1 tbsp honey

  • 1 tbsp hoisin sauce

  • 1/2 tsp garlic powder

  • 1/2 tsp ground ginger

  • Salt and pepper to taste


Instructions

  • Toast sesame seeds and almonds in a dry skillet over medium-low heat until golden. Set aside.

  • Whisk together all dressing ingredients until smooth and emulsified.

  • Combine napa cabbage, iceberg lettuce, carrots, chicken, mandarin oranges, and green onions in a large bowl or on a platter.

  • Drizzle with dressing and toss gently to combine.

  • Top with sesame seeds, almonds, chow mein noodles or wonton strips.

  • Serve immediately or keep components separate until ready to eat.

Notes

  • For best results, toast nuts and seeds before adding.
  • Store components separately for meal prep and mix before serving.
