  • 1 (16.5 oz) roll refrigerated chocolate chip cookie dough (or 2 cups homemade)

  • 8 oz full-fat cream cheese, softened

  • 1/3 cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract


Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8 or 9×9 pan with parchment paper.

  • Press two-thirds of the cookie dough into the pan to form the crust.

  • In a bowl, beat cream cheese and sugar until smooth. Add egg and vanilla, mix until combined.

  • Pour cheesecake layer over cookie crust. Crumble remaining dough on top.

  • Bake 30–35 minutes until golden and set.

  • Cool completely, then chill for 1–2 hours before slicing.
