For the Streusel:

- 1¼ cups all-purpose flour
- ¾ cup cake flour
- 1 teaspoon cornstarch
- 1 teaspoon cinnamon
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 8 tablespoons cold unsalted butter (cubed)
- ½ cup brown sugar (packed)
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg + 1 egg yolk

For the Vanilla Glaze:
- 2 tablespoons unsalted butter (melted)
- 3 tablespoons heavy cream or milk
- 1 cup powdered sugar (sifted)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Make the Streusel: Mix flour, brown sugar, cinnamon, and salt. Cut in butter until crumbly. Chill in the fridge.
- Prepare the Dough: In a bowl, whisk dry ingredients. In another bowl, cream butter and sugars. Add egg, yolk, and vanilla. Mix dry and wet ingredients until combined.
- Shape the Cookies: Roll dough into balls and place on a baking sheet. Create an indentation in each cookie and fill with streusel.
- Bake: Preheat oven to 400°F and bake for 8-11 minutes until golden brown. Let cookies cool before adding glaze.
- Glaze: Mix melted butter, powdered sugar, heavy cream, and vanilla. Drizzle over cooled cookies.

- For extra crunch, add chopped pecans or walnuts to the streusel.
- Chill dough for 15 minutes before baking to prevent spreading.
