Description

These soft and chewy Coffee Cake Cookies combine the warm flavors of cinnamon, brown sugar, and buttery streusel, topped with a sweet vanilla glaze.

  • For the Streusel:

    • ½ cup all-purpose flour
    • ⅓ cup brown sugar (packed)
    • 2 teaspoons cinnamon
    • Pinch of salt
    • 5 tablespoons unsalted butter (softened)
  • For the Cookie Dough:

    • 1¼ cups all-purpose flour
    • ¾ cup cake flour
    • 1 teaspoon cornstarch
    • 1 teaspoon cinnamon
    • ½ teaspoon baking soda
    • ½ teaspoon baking powder
    • ½ teaspoon salt
    • 8 tablespoons cold unsalted butter (cubed)
    • ½ cup brown sugar (packed)
    • ¼ cup granulated sugar
    • 1 teaspoon vanilla extract
    • 1 large egg + 1 egg yolk
  • For the Vanilla Glaze:

    • 2 tablespoons unsalted butter (melted)
    • 3 tablespoons heavy cream or milk
    • 1 cup powdered sugar (sifted)
    • 1 teaspoon vanilla extract
    • Pinch of salt

Instructions

  • Make the Streusel: Mix flour, brown sugar, cinnamon, and salt. Cut in butter until crumbly. Chill in the fridge.
  • Prepare the Dough: In a bowl, whisk dry ingredients. In another bowl, cream butter and sugars. Add egg, yolk, and vanilla. Mix dry and wet ingredients until combined.
  • Shape the Cookies: Roll dough into balls and place on a baking sheet. Create an indentation in each cookie and fill with streusel.
  • Bake: Preheat oven to 400°F and bake for 8-11 minutes until golden brown. Let cookies cool before adding glaze.
  • Glaze: Mix melted butter, powdered sugar, heavy cream, and vanilla. Drizzle over cooled cookies.

Notes

  • For extra crunch, add chopped pecans or walnuts to the streusel.
  • Chill dough for 15 minutes before baking to prevent spreading.
  • Store in an airtight container for up to 3 days or freeze for up to 3 months.
