Description

These Coffee Cake Cookies combine the best of classic coffee cake and soft cookies! Featuring a cinnamon-sugar streusel topping and a sweet vanilla icing drizzle, they’re perfect for breakfast, dessert, or an afternoon treat.


Ingredients

  • Streusel Topping: All-purpose flour, brown sugar, cinnamon, salt, butter
  • Cookie Dough: All-purpose flour, cake flour, cornstarch, cinnamon, baking soda, baking powder, salt, butter, brown sugar, granulated sugar, vanilla, egg + egg yolk
  • Icing: Butter, heavy cream or milk, powdered sugar, vanilla, salt

Instructions

  • Make the Streusel: Mix flour, brown sugar, cinnamon, and salt. Add softened butter and mix until crumbly. Chill.
  • Prepare the Cookie Dough: Whisk dry ingredients. Cream butter and sugars, then add vanilla and eggs. Gradually mix in dry ingredients.
  • Shape the Cookies: Roll dough into balls, place on a baking sheet, and create an indentation in each. Fill with streusel.
  • Bake: Bake at 400°F (200°C) for 10-12 minutes until golden.
  • Icing: Mix melted butter, cream, powdered sugar, and vanilla. Drizzle over cooled cookies.

  • Chill the streusel before using for a crumbly texture.
  • Let cookies cool before adding icing to prevent it from melting.
