Ingredients

  • Chicken Breasts (Boneless, Skinless): 3-4 pieces, diced

  • Penne Pasta: 8 ounces (whole wheat or regular)

  • Cream Cheese: 8 ounces (softened)

  • Ranch Seasoning Mix: 1 packet (or homemade)

  • Chicken Broth: 1 cup (low-sodium preferred)

  • Shredded Cheddar Cheese: 1 cup

  • Salt & Pepper: To taste

  • Olive Oil: 1 tablespoon, for cooking chicken

  • Fresh Parsley (Optional): For garnish


Instructions

  • Cook the Pasta:
  • Boil salted water in a large pot. Add penne pasta and cook for 10–12 minutes or until al dente. Drain and set aside.
  • Cook the Chicken:
  • Heat olive oil in a large skillet over medium heat.
  • Add diced chicken seasoned with salt and pepper.
  • Cook for 6–8 minutes until browned and cooked through.
  • Make the Sauce:
  • Reduce heat to low.
  • Add softened cream cheese and ranch seasoning to the skillet, stirring until the cream cheese melts and mixes well.
  • Gradually add chicken broth, stirring to create a smooth, creamy sauce.
  • Combine & Serve:
  • Add cooked pasta to the skillet, tossing to coat evenly.
  • Sprinkle cheddar cheese on top and cover to let it melt (about 2–3 minutes).
