Description

This Creamy Cajun Chicken Pasta is a bold and comforting dish that’s quick to make and packed with flavor. With tender chicken seasoned with Cajun spices, tossed in a rich, creamy Parmesan sauce, this pasta dish is perfect for weeknight dinners or special occasions.

For the Pasta:

  • 8 oz linguine pasta

  • Salted water for boiling (reserve 1/2 cup of pasta water)

For the Chicken:

  • 2 boneless, skinless chicken breasts (flattened for even cooking)

  • 1 1/2 to 2 tbsp Cajun seasoning (divided, adjust to taste)

  • 2 tsp olive oil

For the Sauce:

  • 2 tbsp unsalted butter

  • 3 garlic cloves, minced

  • 2/3 cup diced tomatoes (fresh or canned)

  • 1 1/2 cups heavy whipping cream

  • 1/2 cup grated Parmesan cheese

  • Salt and pepper, to taste

For Serving:

  • 2 tbsp parsley, finely chopped (optional, for garnish)

  • Extra Parmesan cheese (optional)


Instructions

  • Cook the Pasta:
  • Boil pasta in salted water until al dente.
  • Reserve 1/2 cup of pasta water, drain, and set aside.
  • Prepare & Cook Chicken:
  • Flatten chicken breasts and season with 1 1/2 tbsp Cajun seasoning.
  • Heat olive oil in a skillet over medium-high heat.
  • Cook chicken for 5-6 minutes per side until cooked through.
  • Slice thinly and set aside.
  • Prepare the Sauce:
  • In the same skillet, melt butter over medium heat.
  • Add garlic and cook until fragrant (about 1 minute).
  • Add diced tomatoes and sauté for 2-3 minutes.
  • Make the Creamy Sauce:
  • Pour in heavy cream and add remaining Cajun seasoning.
  • Stir in Parmesan cheese and let simmer for 4-5 minutes until thickened.
  • Season with salt and pepper to taste.
  • Combine and Serve:
  • Add cooked pasta and sliced chicken to the sauce.
  • Toss well, adding reserved pasta water as needed for desired consistency.
  • Garnish with parsley and extra Parmesan if desired. Serve hot.

  • For extra flavor, add sautéed bell peppers or spinach to the sauce.
  • Swap heavy cream for half-and-half for a lighter option.
