Ingredients
For the Pasta:

8 oz linguine pasta

Salted water for boiling (reserve 1/2 cup of pasta water)
For the Chicken:

2 boneless, skinless chicken breasts (flattened for even cooking)

1 1/2 to 2 tbsp Cajun seasoning (divided, adjust to taste)

2 tsp olive oil
For the Sauce:

2 tbsp unsalted butter

3 garlic cloves, minced

2/3 cup diced tomatoes (fresh or canned)

1 1/2 cups heavy whipping cream

1/2 cup grated Parmesan cheese

Salt and pepper, to taste
For Serving:

2 tbsp parsley, finely chopped (optional, for garnish)

Extra Parmesan cheese (optional)
Instructions
- Cook the Pasta:
- Boil pasta in salted water until al dente.
- Reserve 1/2 cup of pasta water, drain, and set aside.
- Prepare & Cook Chicken:
- Flatten chicken breasts and season with 1 1/2 tbsp Cajun seasoning.
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken for 5-6 minutes per side until cooked through.
- Slice thinly and set aside.
- Prepare the Sauce:
- In the same skillet, melt butter over medium heat.
- Add garlic and cook until fragrant (about 1 minute).
- Add diced tomatoes and sauté for 2-3 minutes.
- Make the Creamy Sauce:
- Pour in heavy cream and add remaining Cajun seasoning.
- Stir in Parmesan cheese and let simmer for 4-5 minutes until thickened.
- Season with salt and pepper to taste.
- Combine and Serve:
- Add cooked pasta and sliced chicken to the sauce.
- Toss well, adding reserved pasta water as needed for desired consistency.
- Garnish with parsley and extra Parmesan if desired. Serve hot.
