Description

A quick and comforting 30-minute pasta dish made with tender chicken, sweet corn, crispy turkey bacon, and a creamy Parmesan sauce.


Ingredients

  • 2 tbsp olive oil

  • 2 chicken breasts (1 lb), diced

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp garlic powder

  • 1/2 tsp smoked paprika (optional)

  • 4 slices turkey bacon, chopped

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 2 garlic cloves, minced

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan

  • 8 oz pasta (penne, bowtie, or similar)

  • Optional: fresh parsley or basil, red pepper flakes


Instructions

  • Cook pasta until al dente, reserve ½ cup pasta water, then drain.

  • In a skillet, cook turkey bacon until crispy, then set aside.

  • Sear chicken in olive oil with seasoning until golden and cooked through.

  • Sauté garlic and corn until fragrant.

  • Add cream and Parmesan, simmer until thickened.

  • Stir in pasta, chicken, and turkey bacon. Add pasta water as needed.

  • Garnish with herbs and serve hot.

Notes

  • Substitute beef bacon if preferred.
  • Add spinach or tomatoes for extra veggies.
  • Use rotisserie chicken to save time.
  • Add lemon juice for brightness.
