Ingredients

Scale
  • 1 cup chopped dill pickles
  • 3 tablespoons pickle juice
  • 8 ounces cream cheese, softened
  • ½ cup sour cream or Greek yogurt
  • 1 packet ranch dressing mix (or 2 teaspoons homemade ranch seasoning)
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, chopped
  • ½ cup crispy fried onions
  • ½ cup panko breadcrumbs
  • 2 tablespoons salted butter (for toasting panko)
  • Potato chips, pretzels, or fresh veggies for dipping

Instructions

  • In a bowl, beat softened cream cheese until smooth. Mix in sour cream, pickle juice, ranch seasoning, dill, and chives.
  • Stir in chopped pickles and set aside.
  • In a small skillet, melt butter over medium heat. Toast panko breadcrumbs until golden brown, then mix with crispy fried onions.
  • Fold ¾ of the panko mixture into the dip. Transfer to a serving bowl and top with the remaining panko.
  • Garnish with extra dill and chopped pickles. Serve with chips, pretzels, or veggies.

Notes

  • Adjust the amount of pickle juice for desired tanginess.
  • Best served immediately, but can be refrigerated for up to 3 days.
  • Toasting the panko enhances the crunch, so do not skip this step.
