A rich and creamy soup made with leftover turkey, fresh vegetables, and a savory broth. Perfect for using up holiday leftovers in a delicious and comforting way.

			- 2 tbsp olive oil
 - 1 medium onion, chopped
 - 2 garlic cloves, minced
 - 3 carrots, peeled and diced
 - 2 celery stalks, diced
 - ¼ cup all-purpose flour
 - 4 cups turkey or chicken broth
 - 2 cups milk or half-and-half
 - 3 cups cooked turkey, shredded
 - 1 tsp dried thyme
 - ½ tsp dried rosemary
 - Salt and black pepper to taste
 - Optional: 1 cup frozen peas or corn, ½ cup heavy cream for extra richness
 
Instructions
- 
- Heat olive oil in a large pot over medium heat. Sauté onions, garlic, carrots, and celery for about 5 minutes.
 - Sprinkle flour over the vegetables, stir, and cook for 1 minute.
 - Slowly pour in broth and milk, stirring constantly to avoid lumps.
 - Stir in shredded turkey, thyme, rosemary, salt, and pepper.
 - Simmer for 20 minutes, stirring occasionally. Add peas, corn, or heavy cream in the last 5 minutes.
 - Remove from heat and serve warm with crusty bread or crackers.
 
 
Notes
- Swap turkey for rotisserie chicken if desired.
 - For a dairy-free version, use coconut milk or almond milk.
 - Add cooked rice or pasta to make it heartier.
