Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, peeled and diced
  • 2 celery stalks, diced
  • ¼ cup all-purpose flour
  • 4 cups turkey or chicken broth
  • 2 cups milk or half-and-half
  • 3 cups cooked turkey, shredded
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • Salt and black pepper to taste
  • Optional: 1 cup frozen peas or corn, ½ cup heavy cream for extra richness

Instructions

    1. Heat olive oil in a large pot over medium heat. Sauté onions, garlic, carrots, and celery for about 5 minutes.
    2. Sprinkle flour over the vegetables, stir, and cook for 1 minute.
    3. Slowly pour in broth and milk, stirring constantly to avoid lumps.
    4. Stir in shredded turkey, thyme, rosemary, salt, and pepper.
    5. Simmer for 20 minutes, stirring occasionally. Add peas, corn, or heavy cream in the last 5 minutes.
    6. Remove from heat and serve warm with crusty bread or crackers.

Notes

  • Swap turkey for rotisserie chicken if desired.
  • For a dairy-free version, use coconut milk or almond milk.
  • Add cooked rice or pasta to make it heartier.
