1 lb ground beef (or ground turkey)

5 medium potatoes, peeled and diced (Russet or Yukon Gold)

1 large onion, finely chopped

3 cloves garlic, minced

2 large carrots, diced

2 celery stalks, chopped

4 cups chicken or beef broth (low-sodium recommended)

1 ½ cups heavy cream (or half-and-half)

4 tablespoons butter

¼ cup all-purpose flour (or cornstarch for gluten-free)

Salt and pepper to taste

1 cup cheddar cheese (optional, for topping)

Fresh parsley, chopped (optional, for garnish)
Instructions
- Cook the Beef: Heat a large pot over medium heat, cook the ground beef until browned (5–7 minutes). Drain fat and set aside.
- Sauté Veggies: In the same pot, melt butter and sauté onions, garlic, carrots, and celery for about 5 minutes until softened.
- Add Potatoes & Broth: Add potatoes and broth, bring to a boil, then reduce heat and simmer for 10–15 minutes until potatoes are tender.
- Prepare Flour Slurry: Mix flour and ½ cup of heavy cream in a small bowl until smooth.
- Thicken the Soup: Gradually add the slurry and remaining cream to the pot. Stir continuously until the soup thickens (about 5 minutes).
- Add Cooked Beef: Stir in the browned ground beef and simmer for another 5 minutes.
- Season & Serve: Add salt and pepper to taste. Serve hot, topped with cheddar cheese and parsley if desired.

- For a gluten-free version, use cornstarch instead of flour.
- Swap ground beef with turkey or chicken for a lighter option.
