Ingredients

  • 1 lb ground beef (or ground turkey)

  • 5 medium potatoes, peeled and diced (Russet or Yukon Gold)

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 2 large carrots, diced

  • 2 celery stalks, chopped

  • 4 cups chicken or beef broth (low-sodium recommended)

  • 1 ½ cups heavy cream (or half-and-half)

  • 4 tablespoons butter

  • ¼ cup all-purpose flour (or cornstarch for gluten-free)

  • Salt and pepper to taste

  • 1 cup cheddar cheese (optional, for topping)

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  • Cook the Beef: Heat a large pot over medium heat, cook the ground beef until browned (5–7 minutes). Drain fat and set aside.
  • Sauté Veggies: In the same pot, melt butter and sauté onions, garlic, carrots, and celery for about 5 minutes until softened.
  • Add Potatoes & Broth: Add potatoes and broth, bring to a boil, then reduce heat and simmer for 10–15 minutes until potatoes are tender.
  • Prepare Flour Slurry: Mix flour and ½ cup of heavy cream in a small bowl until smooth.
  • Thicken the Soup: Gradually add the slurry and remaining cream to the pot. Stir continuously until the soup thickens (about 5 minutes).
  • Add Cooked Beef: Stir in the browned ground beef and simmer for another 5 minutes.
  • Season & Serve: Add salt and pepper to taste. Serve hot, topped with cheddar cheese and parsley if desired.

Notes

  • For a gluten-free version, use cornstarch instead of flour.
  • Swap ground beef with turkey or chicken for a lighter option.
  • Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
