Description

This Creamy Sausage Rigatoni is a rich, hearty pasta dish made with Italian sausage, rigatoni, garlic, and a luscious tomato-based cream sauce. It’s a quick, one-pan recipe perfect for busy weeknights or when you’re craving comfort food.

Ingredients

Scale
  • 1 tbsp olive oil
  • 15 oz Italian sausage, casings removed
  • 8 oz rigatoni pasta (uncooked)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 15 oz tomato sauce
  • 5 oz fresh spinach
  • Salt & black pepper, to taste
  • ½ tsp red pepper flakes (optional)
  • ½ cup Parmesan cheese (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add crumbled sausage and cook for 5 minutes, breaking it into small pieces. Drain excess grease.
  • Add minced garlic and Italian seasoning. Cook for 1 minute until fragrant.
  • Pour in chicken broth, heavy cream, and tomato sauce. Stir in uncooked rigatoni, ensuring it is submerged.
  • Bring to a gentle boil, then reduce heat to a simmer. Cover and cook for 10-15 minutes, stirring occasionally until pasta is al dente.
  • Stir in fresh spinach and cook for 2-3 minutes until wilted. Adjust seasoning with salt, pepper, and red pepper flakes.
  • Remove from heat and let rest for 2 minutes. Garnish with Parmesan cheese before serving.

Notes

  • Use spicy Italian sausage for extra heat.
  • Substitute heavy cream with half-and-half for a lighter version.
  • For extra thickness, simmer the sauce uncovered for a few minutes before serving.
  • Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
