- 5 oz fresh spinach
- Salt & black pepper, to taste
- ½ tsp red pepper flakes (optional)
- ½ cup Parmesan cheese (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add crumbled sausage and cook for 5 minutes, breaking it into small pieces. Drain excess grease.
- Add minced garlic and Italian seasoning. Cook for 1 minute until fragrant.
- Pour in chicken broth, heavy cream, and tomato sauce. Stir in uncooked rigatoni, ensuring it is submerged.
- Bring to a gentle boil, then reduce heat to a simmer. Cover and cook for 10-15 minutes, stirring occasionally until pasta is al dente.
- Stir in fresh spinach and cook for 2-3 minutes until wilted. Adjust seasoning with salt, pepper, and red pepper flakes.
- Remove from heat and let rest for 2 minutes. Garnish with Parmesan cheese before serving.
