- 1 lb shrimp, peeled and deveined
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, diced
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp fresh dill, chopped
- 1/2 tsp paprika
Instructions
- Boil salted water with a quartered lemon. Cook shrimp for 2-3 minutes until pink.
- Transfer shrimp to an ice bath, then pat dry.
- In a bowl, mix mayonnaise, Dijon mustard, lemon juice, garlic, dill, paprika, salt, and pepper.
- Combine shrimp, celery, and red onion. Add dressing and toss to coat.
- Refrigerate for at least 15 minutes before serving.
