Crust:
- 1 package sugar cookie mix (approx. 17.5 oz)
- 1 package instant French vanilla pudding mix (3.4 oz)
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1/4 cup light brown sugar, packed
- 1 tsp vanilla extract
Filling:
- 3 (8 oz each) packages cream cheese, softened
- 3 large eggs
- 1 cup sour cream
- 1 cup granulated sugar
- 1 tbsp vanilla extract
- 1/2 cup toffee bits
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- Prepare Crust: Mix all crust ingredients until combined. Press into the baking pan and bake for 12–15 minutes. Let cool.
- Make Filling: Beat cream cheese until smooth. Add eggs one at a time, followed by sour cream, sugar, and vanilla extract. Mix until creamy.
- Bake: Pour filling over crust and bake for 40–45 minutes until the center is slightly jiggly.
- Add Toffee Bits: Sprinkle toffee bits over the warm cheesecake.
- Chill: Refrigerate for at least 3 hours before slicing and serving.
