Description

Golden and crispy on the outside, fluffy inside, and bursting with cheesy, herby flavor—these easy oven-roasted Parmesan potatoes are a family favorite side dish.


Ingredients

    • 454g baby gold potatoes, halved

    • 57g unsalted butter, melted

    • 15g minced garlic

    • 80g grated Parmesan cheese (divided)

    • ¼ tsp black pepper

    • ¼ tsp onion powder

    • ½ tsp Italian seasoning

    • ¼ tsp garlic powder

    • ½ tsp salt

    • ½ tsp red pepper flakes (optional)

    • 12 tbsp olive oil

    • 2 tbsp chopped parsley (garnish)


Instructions

  • Preheat oven to 220°C / 425°F.

  • Wash and halve potatoes, then pat dry.

  • Mix melted butter, garlic, 53g Parmesan, and spices into a paste.

  • Spread paste in baking dish.

  • Place potatoes cut-side down into the mixture.

  • Brush tops with olive oil and sprinkle remaining Parmesan.

  • Bake for 35 minutes until golden and crispy.

  • Rest 5 minutes. Garnish with parsley and serve.

Notes

  • Don’t skip drying the potatoes—it’s essential for crispiness.
  • Use fresh grated Parmesan for best results.
  • For extra crispness, broil for 1–2 minutes at the end.
  • Can be made dairy-free with olive oil and dairy-free cheese.
