454g baby gold potatoes, halved

57g unsalted butter, melted

15g minced garlic

80g grated Parmesan cheese (divided)

¼ tsp black pepper

¼ tsp onion powder

½ tsp Italian seasoning

¼ tsp garlic powder

½ tsp salt
-
½ tsp red pepper flakes (optional)

1–2 tbsp olive oil

2 tbsp chopped parsley (garnish)

Instructions

Preheat oven to 220°C / 425°F.

Wash and halve potatoes, then pat dry.

Mix melted butter, garlic, 53g Parmesan, and spices into a paste.

Spread paste in baking dish.

Place potatoes cut-side down into the mixture.

Brush tops with olive oil and sprinkle remaining Parmesan.

Bake for 35 minutes until golden and crispy.

Rest 5 minutes. Garnish with parsley and serve.
