- 3 lbs boneless, skinless chicken thighs
- 1 cup low-sodium soy sauce
- 1 cup light brown sugar
- ⅓ cup apple juice (instead of bourbon)
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 4 cloves garlic, minced
- ½ tsp ground ginger
- ½ tsp red pepper flakes (optional)
- ¼ cup green onions, chopped (for garnish)
- 3 tbsp cornstarch
- 2 tbsp water
Instructions
- Place the chicken thighs in the slow cooker.
- In a bowl, mix soy sauce, apple juice, brown sugar, vinegar, honey, garlic, ginger, and red pepper flakes.
- Pour the sauce over the chicken. Cover and cook on HIGH for 4 hours or LOW for 6 hours.
- Remove the chicken, shred it with forks, and return it to the slow cooker.
- Mix cornstarch and water in a small bowl, then stir into the sauce. Let cook for 10-15 minutes until thickened.
- Serve over rice, garnish with green onions, and enjoy!

- Use chicken breasts for a leaner option.
- Adjust sweetness by reducing brown sugar to ½ cup.
- Add hoisin sauce for a deeper umami flavor.
