Ingredients

  • 3 lbs boneless, skinless chicken thighs
  • 1 cup low-sodium soy sauce
  • 1 cup light brown sugar
  • ⅓ cup apple juice (instead of bourbon)
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 4 cloves garlic, minced
  • ½ tsp ground ginger
  • ½ tsp red pepper flakes (optional)
  • ¼ cup green onions, chopped (for garnish)
  • 3 tbsp cornstarch
  • 2 tbsp water

Instructions

  • Place the chicken thighs in the slow cooker.
  • In a bowl, mix soy sauce, apple juice, brown sugar, vinegar, honey, garlic, ginger, and red pepper flakes.
  • Pour the sauce over the chicken. Cover and cook on HIGH for 4 hours or LOW for 6 hours.
  • Remove the chicken, shred it with forks, and return it to the slow cooker.
  • Mix cornstarch and water in a small bowl, then stir into the sauce. Let cook for 10-15 minutes until thickened.
  • Serve over rice, garnish with green onions, and enjoy!

  • Use chicken breasts for a leaner option.
  • Adjust sweetness by reducing brown sugar to ½ cup.
