Description

A refreshing vegetarian sandwich made with crisp cucumber, juicy tomatoes, fresh mozzarella, peppery greens, and a creamy pesto-mayo spread, finished with a drizzle of balsamic glaze. Perfect for quick lunches or light dinners.


Ingredients

  • 1 tbsp pesto

  • 1 tbsp mayonnaise

  • 2 slices whole-wheat sandwich bread, toasted

  • 1 small tomato, sliced (3½ oz)

  • 1 oz fresh mozzarella cheese, sliced

  • ⅓ cup sliced cucumber (2 oz)

  • ½ cup baby kale or arugula

  • 1 tbsp balsamic glaze

  • Freshly ground black pepper to taste


Instructions

  • Mix pesto and mayonnaise in a small bowl.

  • Spread the mixture on both slices of toasted bread.

  • Layer one slice with tomato, mozzarella, cucumber, and greens.

  • Drizzle with balsamic glaze and sprinkle with pepper.

  • Top with the second slice of bread, slice in half, and serve immediately.

Notes

  • For extra crunch, pat the cucumber dry before assembling.
