Description

Ingredients

  • 1 English cucumber, sliced into half moons

  • 10 oz grape or cherry tomatoes, halved

  • ½ small red onion, thinly sliced

  • 2 tbsp olive oil

  • 2 tbsp red wine vinegar

  • 1 tsp honey

  • ½ tsp kosher salt

  • ¼ tsp black pepper

  • 1 tbsp chopped fresh parsley, dill, or basil (optional)


Instructions

  • Slice the cucumber and tomatoes.

  • Thinly slice the red onion.

  • In a bowl, whisk olive oil, vinegar, honey, salt, and pepper.

  • Combine vegetables in a large bowl.

  • Pour dressing over and toss gently.

  • Stir in fresh herbs if using.

  • Serve immediately or chill for up to 2 hours.

Notes

  • For less sharp onion flavor, soak slices in cold water for 10 minutes before adding to the salad.
