Ingredients

1 large English cucumber, halved and sliced

2 cups cherry tomatoes, halved

1½ tbsp red wine vinegar

1 tsp honey

Salt and pepper, to taste

2 tbsp chopped fresh parsley, dill, or basil
Instructions

Prepare the vegetables (slice cucumber, halve tomatoes, slice onion).

Combine cucumber, tomatoes, and onion in a bowl.

In a small bowl, whisk olive oil, vinegar, honey, salt, and pepper.

Pour dressing over vegetables and toss gently.

Add chopped herbs and toss again before serving.
Notes
- Soak red onions in cold water for 10 minutes to reduce sharpness.
- Best served fresh. Store leftovers for up to 2 days in the fridge.
